One for the Road

As a week-old vegetarian, I particularly appreciate this quote.  That chicken teriyaki looked good today at lunch; instead, I went for the tofu.

    She is coming from the perspective of health, and I feel that ethical reasons, rather than health reasons, are stronger motivations for trying to go vegan. It really isn’t depressing at all, actually. Since going vegan, I’ve tried so many new foods that I probably would never have tried otherwise. I’d much rather not eat meat, dairy, or eggs again than give up the plethora of plant foods available: vegetables, fruits, nuts, grains, legumes, etc!
